Chef James London
James London is the chef and owner of Chubby Fish in Charleston, South Carolina, where his seafood-driven cuisine is rooted in the Lowcountry and shaped by global influences. Since opening the restaurant in 2018, Chubby Fish has earned national recognition from the James Beard Foundation, The New York Times, Bon Appétit, North America's 50 Best Restaurants, Eater, Food & Wine, and Robb Report.
Born in Charleston and raised in South Carolina's Upstate, London began cooking professionally at 14. While earning a double major at the College of Charleston, he worked in restaurants before attending The French Culinary Institute in New York City. After graduating, he became executive chef at Niko, a Japanese restaurant in SoHo, then continued his culinary career in San Francisco before returning home to open Chubby Fish.
Together, London and Chubby Fish have been recognized with multiple James Beard Award honors, including nominations for Best Chef: Southeast and Outstanding Restaurant. His cooking reflects the ingredients and traditions of the Lowcountry while drawing inspiration from techniques and flavors from around the world. Guided by the seasons and a deep respect for local fishermen, farmers, and producers, his approach celebrates both place and craftsmanship.
